Miso Caramel Wings

Fair warning before we start: you will need the wipes for this one.

The Miso Caramel Wings are one of those dishes that gets ordered at almost every table on Selkie Cove nights, and once you've had them, you'll understand why. Boned, two-piece wings are marinated properly before they even see the pan, then glazed right at the end in a sticky miso caramel sauce, finished with sesame and spring onion. Sweet, salty, a little bit sticky in the best possible way — they disappear from the plate fast.

They're built as a sharing plate, which is exactly how they're meant to be eaten — plonked in the middle of the table, everyone diving in, fingers doing the work rather than a knife and fork. We won't pretend it's a tidy dish. It isn't. But some of the best things on the menu never are.

Order them alongside our Papas Rellenas or the Yarg Arancini and you've got the makings of a proper Selkie Cove spread. Just budget in a couple of extra napkins.
